We are a family-owned catering company built on quality, collaboration, and pride in what we create. Our kitchen is the heart of our operation, and were looking for a strong, hands-on leader who values teamwork, respects ownership involvement, and wants to help grow both our catering and retail production.
Position Overview
The Kitchen Manager will oversee daily catering production while managing and developing our in-store deli production. This role leads a team of 510 kitchen staff and works closely with ownership to execute current systems and develop new opportunities.
The ideal candidate is organized, collaborative, innovative, and driven someone who not only manages operations efficiently but also generates and follows through on ideas to expand production and increase profitability. Someone who takes ownership of their role, leads by example, and sees opportunity where others see routine. Key Responsibilities
Team Leadership & Collaboration
- Lead, supervise, and develop a team of 510 BOH team members
- Train, coach, and mentor staff to maintain high standards
- Foster a respectful, accountable, team-oriented culture
- Remain open to ownership input and actively collaborate on new ideas and improvements
- Communicate clearly and consistently with ownership and team members
Production & Operations
- Develop and manage daily, weekly, and monthly catering production schedules
- Oversee food preparation to ensure quality, consistency, and timeliness
- Coordinate production to meet event timelines and retail demands
- Maintain efficient kitchen workflow and organization
Deli & Store Production Growth
- Generate and develop new ideas for deli counter offerings and store production
- Formulate retail pricing based on food and department costing
- Identify opportunities to expand product lines and increase sales
- Execute new production initiatives from concept to implementation
- Monitor product performance and adjust offerings as needed
Inventory & Cost Control
- Manage BOH inventory and oversee food and supply ordering
- Conduct regular store inventory checks
- Track food costs and usage trends
- Implement strategies to reduce waste and increase efficiency
- Maintain accurate production and inventory records
- Daily/weekly inventory of supplies to keep stock levels appropriate to the workload
- Place orders with vendors
- Be aware of price changes from different vendors and maintain relationships with reps
Sanitation & Safety
- Maintain cleanliness, organization, and food safety standards
- Ensure compliance with all health department regulations
- Uphold proper food handling and storage procedures
Qualifications
- Previous kitchen management or leadership experience (catering/banquet production experience preferred)
- Strong organizational and time management skills
- Ability to manage multiple production streams (catering and retail)
- Experience with inventory control and food cost management
- Open, collaborative mindset and willingness to work closely with ownership
- Self-motivated with the drive to generate and execute new ideas
- Wild game experience is a plus
- Ability to work in a fast-paced, evolving environment

Country Smoke House is in search of a driven individual who is skilled, dedicated, organized and passionate. Our catering department offers a wide variety of opportunities for creativity from our in store offerings to our roadside BBQ and occasional special events. Country Smoke House has many different avenues our catering department feeds; pick up catering, in store sales (ready to eat meals, salads, desserts, etc), our famous Roadside BBQ, occasional special events at the store, occasional offsite events and more! We are looking for someone who can think on their feet, stay organized, multitask and give direction. You will be assisting our Chef with a variety of day to day operations and helping train and lead the team daily.
