Each slab is tumbled in an enclosed rotating chamber to massage the flavors deep into the meat by using vacuum suction. The slabs are then laid to rest to cure for four days. Finally, the bacon is slow-smoked over natural hardwood embers for 18 hours, forcing our special seasonings & natural smoke to penetrate deeper into each slab, enhancing the flavor to peak perfection.
