Our Steak and Chuck is not only made from 100% Choice ground beef and steak: but it's also the perfect burger blend. Starting Tuesday August 5th we'll have 5lb bags of Steak and Chuck on sale for $5.99/lb, so we talked Chef Sarah into making Smash Burgers for us (it was not a hard sell). Here is her recipe, a very simple and delicious burger that anyone can make at home. The quality and flavor of the meat really shines here. If you don't have a flat top grill, no worries, a cast iron or heavy pan will do just fine.
- Take your Steak and Chuck and gently form into balls, about 1/4 lb per burger patty. You don't have to be precise, and you don't want to overwork the meat.
- With your flat top heated to medium high, add oil or butter and begin cooking your onion, don’t forget to season! Flip/stir until caramelized.
- Add one dab of yellow mustard on the cooking surface per patty, again we don't need to be precise, about 1 tsp. Place your Steak and Chuck balls on top of the sizzling mustard.
- Season each ball with a generous dash of Steve's All Purpose Seasoning.
- Smash! Use a heavy spatula or burger smasher (even a small cast iron pan will do in a pinch) and smash those burger balls flat and let cook for about 3-5 minutes.
- Flip the burgers and season, add your cheese, and cover.
- Place your buns atop the onion, they'll steam and pick up extra flavor at the same time.
- After about three minutes your burgers should be ready, and the cheese will have melted. Remove from heat and assemble your burgers.
- Top with the grilled onion, dill pickle slices, and you're ready to go.
