We season the venison cuts with Steve Francis' own blend of spices and marinate them for 24 hours before getting rolled in gourmet cracked peppercorns. The pieces are then smoked with natural hardwoods for several hours and finished to a moist and tender peppery treat. A package of Peppered Venison Jerky weighs .20 - .25 Lb. The weight of the Venison Peppered Jerky is determined after it is fully smoked.
