We season the meat with our own secret blend of herbs and spices and toss it with cubes of premium jalapeno cheese. Finally, the salami is carefully hung in our smokehouse over natural hardwood embers for hours until perfection is reached. A Venison Jalapeno Cheese Salami long package weighs 2.5-2.8 lb, chub package weighs 1.20 -1.40 lb, and Mini - 9-10 oz. (available in December). The weight of the Venison Jalapeno Cheese Salami is determined after it is fully smoked.
