We season our venison cuts with our famous recipe of herbs and spices and then toss them with gourmet cheddar cheese cubes. As always, we finish our salamis in our smokehouse for six hours over natural hardwoods. A Venison Cheddar Cheese Salami long package weighs 2.5-2.8 lb, chub package weighs 1.20 -1.40 lb, and Mini - 9-10 oz. (available in December). The weight of the Venison Cheddar Cheese Salami is determined after it is fully smoked.
